On a whim I decided to try baking them this evening… and it worked! I baked them on a baking sheet lined with parchment paper lightly greased with coconut oil and divided the batter into 8 fritters. 350 degrees, 10 minutes on one side, flipped them with a spatula, then baked them 5 more minutes. Now I can just refrigerate them and warm them up throughout the week!

It’s unlikely that anyone would eat the entire batch of fritters and butter in one day, but it’s great to be able to divide it to portion size.

Also, the protein, fiber, and nutrient levels are equally important. Quinoa is nutrient dense, full of fiber and protein and essential fatty acids. :) And the coconut honey butter is great for you, too, in moderation.
